Kari Eakins

I grew up in the small town of Lingle, Wyoming. I got a degree in Media Communication from Bethel University in the Twin Cities area in Minnesota. I lived there for 7 years and only made it to the Mall of America 6 times. I did however attend too many Twins games to count. I moved back to Wyoming in November of 2009 to be closer to my family. I have two nieces that can make anybody's heart melt. When I am not working I am most likely dancing or playing volleyball, wait that's what I wish I was doing all the time...gotta work on that. Time for Freezing Peaches – Country Cooking

Now that fall is here it's time to preserve all of the great produce that's been growing through the summer. If you have never canned or simply don't have time this fall, freezing is a great alternative, especially for non-citrus fruits. Below are instructions for freezing peaches. Supplies are minimal, the fruit will be good for up to 12 months and this same method works fantastic for pears.

Buttermilk Pie is a Country Cooking Indulgence

Summer means pie, and the best pie I've ever had is buttermilk. This particular recipe is based on one of the best selling pies of the 1950's at Moeller's Bakery in Houston, Texas, where it is still made on order. It's basically a take on a traditional southern custard pie in which buttermilk makes the inside much richer. This pie is insanely good for how simple it is.

Buford’s Lone Citizen Profiled by NBC’s Today Show [VIDEO]

"You've probably never heard of Buford, Wyoming," That's how NBC's Ann Curry introduced a segment on the town during Tuesday morning's Today Show. Lucky for us, we have heard of Buford! In fact, many residents of Southeast Wyoming drive past Buford several times a week, occasionally even stopping to get some gas or just to chat with Buford's only citizen, Don Sammons.

Sammons was visited by NBC's Lee Cowan who, like many others around the country, just can't resist stopping in the town with a population of one.
