Now that fall is here it's time to preserve all of the great produce that's been growing through the summer. If you have never canned or simply don't have time this fall, freezing is a great alternative, especially for non-citrus fruits. Below are instructions for freezing peaches. Supplies are minimal, the fruit will be good for up to 12 months and this same method works fantastic for pears. Here's what you'll need:

  • Peaches, at peak freshness
  • Fruit-Fresh Produce Protector
  • Water
  • Pot of boiling water
  • Bowl of ice water
  • Quart sized baggies

Before you touch the peaches, you'll want to set up you station so you can move quickly from one step to the next. Read through all of the instructions so you can set up in the way that works best for you and the work space you have. Generally, you'll want to place the bowl of ice water right next to the pot of boiling water then set up a cutting board, knife, mixing bowl and baggies in a line on the counter. Go ahead and mix 2 teaspoons of Fruit-Fresh with 3 Tablespoons of water.  You can skip this step and just sprinkle on the Fruit-Fresh later, but it easier to ensure all the peaches are coated by mixing with water and tossing.

Throw some peaches into the boiling water for a minute or less. They are ready to come out when the skin peels right off.

The peaches should go from the boiling water right into the bowl of ice water. This is to ensure they don't cook. After a couple of minutes you can take the peaches out of the ice water.

Now you can literally slide the skin right off the peaches.

Use a good knife to cut slice around the pit.

Pull the slices off the pit and into a mixing bowl until you have 4 cups of peaches.

Pour the Fruit-Fresh over the peaches and toss. If you didn't mix the Fruit-Fresh with water, then just sprinkle it over the peaches and toss.

Move the peaches into a baggie, then squeeze out the air and seal the baggie.

Now it's ready for the freezer!

Repeat the process until all of your peaches are preserved. Also, it's a good idea to put a date on the baggies, especially if you are giving some away. Now you can enjoy fresh peaches all winter long!
