Merry Baking Season. Do you make Wyoming Cowboy Cookies? At least that's what we call them here. The keys to the Wyoming Cowboy Cookie are coconut, pecans, chocolate chips, and oatmeal (optional).
Check out one recipe from tasteofhome.com and you'll see this is a healthy cookie if by healthy we mean one or two cookies make half a meal. Honestly, in the nutrition category, they probably rank higher than most cookies, but when you make a batch of a dozen, you can't kill them all in one sitting by yourself.
If you want to make your version a little less unhealthy, of course, that's fine. Rarely does anyone go exactly by anyone else's book, right?
Ingredients
1 cup flaked coconut
2 3/4 cup chopped pecans
3 1 cup butter, softened
4 1-1/2 cups packed brown sugar
5 1/2 cup sugar
6 2 large eggs
7 1-1/2 teaspoons vanilla extract
8 2 cups all-purpose flour
9 1 teaspoon baking soda
10 1/2 teaspoon salt
11 2 cups old-fashioned oats
12 2 cups (12 ounces) chocolate chips
Directions
Place coconut and pecans on a 15x10x1-in. baking pan. Bake at 350° for 6 to 8 minutes or until toasted, stirring every 2 minutes. Set aside to cool.
In a large bowl, cream butter and sugars until light and fluffy. Add eggs and vanilla; beat well. Combine the flour, baking soda and salt Add to creamed mixture; beat well. Stir in the oats, chocolate chips, and toasted coconut and pecans.
Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 350° for about 12 minutes or until browned. Remove to wire racks to cool. Yield: 6 dozen.
